  • 1 lb pork tenderloin
  • 2 tbsp fresh ginger, grated
  • 1/4 cup freshly squeezed lime juice
  • 1 cup coconut milk (full-fat)
  • 1 cup jasmine rice
  • 2 tbsp low-sodium soy sauce
  • 4 garlic cloves, minced
  • 2 tbsp vegetable oil

Instructions

  1. In a bowl, mix soy sauce, minced garlic, lime juice, and grated ginger. Place pork in a resealable bag, pour marinade over it, seal, and refrigerate for at least one hour.
  2. Rinse jasmine rice until water runs clear. Combine rice with coconut milk and water (equal parts) in a saucepan. Bring to boil over medium heat, then reduce to low and simmer for 15-20 minutes until tender.
  3. Heat vegetable oil in a skillet over medium-high heat. Remove pork from marinade and sear on all sides until golden brown (5-7 minutes).
  4. Preheat oven to 375°F (190°C). Transfer seared pork to an oven-safe dish and bake for 15-20 minutes or until internal temperature reaches 145°F (63°C). Let rest before slicing.
  5. After cooking, let rice sit covered for five minutes and fluff with a fork before serving alongside sliced pork.
