  • 3 fresh limes (juiced)
  • 1/4 cup pure honey
  • 3 cloves garlic (minced)
  • 2 ripe avocados
  • 2 cups long-grain white rice (uncooked)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix lime juice, honey, garlic, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Prepare white rice according to package instructions until fluffy.
  3. Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side or until cooked through (internal temp of 165°F).
  4. Halve avocados, remove pits, scoop out flesh, mash gently with salt and lime juice.
  5. On a plate, layer cooked rice, grilled chicken slices, then mashed avocado. Drizzle with extra lime juice or honey if desired.
