  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (5 oz) tuna in water or olive oil, drained
  • 2 tbsp fresh lemon juice
  • 3 tbsp tahini
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by draining and rinsing chickpeas and tuna. Finely chop the red onion and parsley.
  2. In a large bowl, combine chickpeas, tuna, red onion, and parsley. Use a fork to gently break up the tuna while mixing.
  3. In another bowl, whisk together tahini, lemon juice, olive oil, salt, and pepper until smooth. If too thick, add warm water one tablespoon at a time.
  4. Pour the dressing over the chickpea mixture and fold gently until evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
