  • 1 cup quinoa
  • 2 cups water
  • 1 large Granny Smith apple, diced
  • 1/2 red bell pepper, diced
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. In a saucepan, bring quinoa and water to a boil. Lower heat, cover, and simmer for 15 minutes until water is absorbed. Let sit covered for 5 minutes before fluffing with a fork.
  2. While quinoa cooks, chop the apple, red bell pepper, cucumber, and red onion. Combine these in a large bowl.
  3. Stir in chopped parsley.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. Once quinoa has cooled slightly, add it to the vegetable mixture. Drizzle with dressing and toss gently to combine.
