  • 1 cup semi-pearled farro
  • 1 ½ cups water or vegetable broth
  • 1 cup fresh pomegranate seeds
  • 1 medium cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup flat-leaf parsley (chopped)
  • ½ cup feta cheese (crumbled)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Cook the farro: Rinse 1 cup of farro under cold water. In a saucepan, combine it with 1 ½ cups of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 25-30 minutes until tender. Drain any excess liquid.
