  • 2 lbs boneless pork shoulder, cut into 1-inch chunks
  • 4 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tsp olive oil (for browning)
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by washing and chopping all vegetables. Mince the garlic and cut the pork into chunks.
  2. In a large pot over medium-high heat, add olive oil and brown the pork on all sides. Remove from pot and set aside.
  3. In the same pot, sauté onions, carrots, and garlic for about five minutes until softened.
  4. Return the browned pork to the pot with potatoes; stir in tomato paste and beef broth. Add thyme and bay leaves.
  5. Bring to a boil, then reduce heat to low, cover partially, and simmer for about two hours until pork is fork-tender.
  6. Taste and adjust seasoning before serving hot.
