  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 350°F (175°C). Boil water in a large pot and cook chicken for 15-20 minutes until fully cooked. Shred the chicken and set aside.
  2. In a bowl, combine shredded chicken, diced onions, half of the shredded cheese, and garlic powder. Mix thoroughly.
  3. On a flat surface, lay out tortillas and fill each with the chicken mixture. Roll tightly and place seam-side down in a greased baking dish.
  4. In another bowl, whisk together cream of chicken soup, sour cream, and chicken broth until smooth. Pour over rolled enchiladas.
  5. Top with remaining shredded cheese and cover with aluminum foil. Bake for 25 minutes; remove foil and bake for an additional 10 minutes until cheese is bubbly.
