  • 2 (6 oz) Fresh Salmon Fillets
  • 4 cups Mixed Greens (arugula, spinach, romaine)
  • 1 cup Cucumber, sliced
  • 1 cup Cherry Tomatoes, halved
  • ½ cup Red Onion, thinly sliced
  • 4 tbsp Extra Virgin Olive Oil
  • 2 tbsp Lemon Juice (freshly squeezed)
  • 1 tsp Dijon Mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Place salmon on a parchment-lined baking sheet, drizzle with olive oil, and season with salt and pepper.
  2. Bake for 15-20 minutes until salmon flakes easily. Let cool slightly before breaking into bite-sized pieces.
  3. While the salmon bakes, wash mixed greens and slice cucumber and cherry tomatoes. Thinly slice red onion.
  4. In a bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
  5. In a large bowl, combine mixed greens, cucumbers, tomatoes, onions, and salmon pieces. Drizzle dressing over the salad just before serving.
