  • 8 cups stale brioche or challah bread, cubed
  • 2 cups fresh blueberries (or frozen)
  • 2 cups almond milk
  • 1/2 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 1 tbsp flaxseed meal + 3 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Prepare the flax egg by mixing flaxseed meal with water; let it thicken for 5 minutes.
  3. Layer half the bread cubes in the baking dish, followed by half the blueberries.
  4. In a bowl, whisk almond milk, maple syrup, cinnamon, vanilla extract, and flax egg until smooth; pour over the bread mixture.
  5. Add remaining bread on top and sprinkle with remaining blueberries; gently press down to soak.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until golden brown.
