  • 2 celery stalks, sliced

  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil chicken breasts in salted water for 15-20 minutes until cooked. Remove and shred.
  2. In the same pot, heat olive oil over medium heat. Sauté onions, carrots, and celery for about 5-7 minutes until softened. Add garlic and cook for an additional minute.
